Features
Sorbitan monolaurate(S-20) is a mixture of esters formed from the fatty acid lauric acid and a sorbitol-derived polyol. Span 20 is an amber-colored viscous liquid that is insoluble in water and soluble in oil and organic solvents. Sorbitan monolaurate is a co-surfactant, so it is not used alone, but often mixed with tween series emulsifiers for good synergy. Span20 is mainly found as a lubricant, stabilizer, and emulsifier in food and personal care products.
Application
1. Sorbitan monolaurate(S-20) is suitable for use in dry yeast as a carrier for active yeast. Due to its outstanding properties of emulsification and stabilization, the addition of appropriate amount of span20 to dry yeast is beneficial to promote the molding of dry yeast and maintain the biological activity after hydration.
2. Span emulsifier 20 is an excellent companion for coffee. Adding span20 to coffee can make it fully utilize its emulsifying properties, thus making the fat globules more evenly distributed, better dissolved in water, and improving the taste of coffee.
3. Span20 can also be used for cream frothing. If span20 is applied to the cream, it can shorten the time of cream frothing and improve the volume and structure of the cream foam, so as to produce beautiful and stiff foam.
4. Span emulsifier can be added to cakes. Its prominent emulsifying and stabilizing properties allow it to be used as a cake emulsifier. By adding span20 to cakes, the volume of the cake can be increased to a certain extent, and the internal structure and paste stability of the cake can be improved, thus enhancing the taste of the cake and prolonging the shelf life of the cake.
