Product Introduction

Mono and diglycerides are surfactants produced by interesterification of fats or oils with glycerol. They are the most commonly used emulsifiers in baked goods.Monoglycerides are extensively used in the production of buns and pan bread since they are very effective crumb softeners. In addition to their proven anti-staling functionality.GMS is the most widely used food Additives, safely used in the production and processing of food, medicine, plastics, etc., accounting for more than half of the market emulsifier consumption.

Major Application

 

In Yeasted products:Chemsino GMS powder Mono-di glycerides /GMS 40/GMS52 / GMS60 is incorporated into bread formulas to promote softer crumb and reduce starch retrogradation.Improving loaf volume and extending shelf life.

In sponge cakes :Reducing water-oil interfacial tension.Improving dispersion and incorporation of dry and liquid ingredients.Increasing aeration of batter emulsions.Better foam (air/water emulsion) stabilization.

In coffee mate:·Preventing fat crystal.GMS powder can significantly improve the taste at a very low cost, and can also make the taste of coffee more mellow. In the meantime , it needs to work well under the acid environment of coffee . The Choice of emulsifier becomes important here

 

 

Dosage and Solubility

 

Dosage:Recommended to be used at level of 2%. Formulators can vary amount depending on its end application.

Solubility :insoluble in water and soluble in oil and ethanol.

 

Shelf life and Storage :

 

Shelf Life :12 months in unopened original packaging under the storage conditions.

Storage :Avoid sunlight, rain. Store in unbroken packaging at the cool, dry and well-ventilated place. The storage temperature should below 25℃ to ensure the quality of product.
