Product Introduction

Monoglyceride is a glyceride obtained from glycerol and fatty acid. Distilled monoglycerides(DMG) are monoglycerides that are synthesised and undergone molecular distillation technique to separate and concentrate the monoglycerides from some diglycerides (and triglycerides). It is done because monoglycerides are considered much more effective emulsifiers than diglycerides. These are effective aerating agents and emulsifier gel products, used in baking industry for making cakes and other aerated products. They improve the quality, texture and shelf life of the products.

Major Application

 

In Yeasted products :Chemsino high purity GMS is incorporated into bread formulas to improve dough handling and the products overall quality .They result in significant improvements in machinability,shelf life and loaf volume .

In sponge cakes :Cake gels are cake improvers comprised of water, emulsifiers and solvents which are used primarily in production of sponge cakes.Distilled Monoglycerides (DMG) forms the main composition of emulsifiers in a cake gel formulation and is the source of α-crystalline emulsifiers.And in this way , it improves the aeration , whipping ability and emulsification of the cake batter .

In coffee mate(non dairy creamer/coffee whitner) : The basic requirements for coffee whitner is about the easy dissolve and whitening maintaining . In the meantime , it needs to work well under the acid environment of coffee . The Choice of emulsifier becomes important here .Chemsino DMG acts a fundamental role to stablize the formed small oil droplets during the production process of NDC .

Dosage and Solubility

 

Dosage:In baked products :0.2%-0.5% based on the flour weight

Solubility :insoluble in water and soluble in oil and ethanol.

 

Shelf life and Storage :


Shelf Life :12 months in unopened original packaging under the storage conditions.

Storage :Avoid sunlight, rain. Store in unbroken packaging at the cool, dry and well-ventilated place. The storage temperature should below 25℃ to ensure the quality of product.
