Features

Glyceryl Monostearate GMS can be categorized into powder, beads, liquids and flakes depending on their state. This type is the powder form, which can be divided into GMS 40, GMS 52 and GMS 60. The common use of food grade glyceryl monostearate is as an emulsifier, but also as a stabilizer and humectant, such as in breads, confectionery, frozen desserts, fats and oils.

 

 

Application

Chemsino GMS has been used in the following applications:
GMS powder monoethylene glycol / GMS 40 / GMS 52 / GMS 60 are added to the bread making process, they can promote the softening of bread crumbs and reduce the starch retention. At the same time, it improves the volume of bread and prolongs its shelf life.
GMS is used in sponge cake to reduce the water-oil interfacial tension, improve the dispersion and binding of dry and liquid ingredients, increase the aeration of the batter emulsion, and better foam (air/water emulsion) stability.
GMS powder is used in coffee because it has a good emulsifying effect and therefore prevents fat crystallization. It improves the taste of coffee, and also makes the flavor of coffee more mellow.
