Sorbitan Monooleate emulsifier, also known as span 80 emulsifier, is formed by the reaction of sorbitol, its mono-anhydride, and dianhydride with fatty acids. Span 80 croda is a nonionic surfactant with strong emulsifying, dispersing and lubricating effects and can be mixed with various surfactants such as Tween-80. Span 80 emulsifier can be utilized in the food industry as well as in cosmetics, industrial, and pharmaceutical industries.

Features
According to the different fatty acids reacted, Span can be divided into several varieties such as Span 20, Span 40, Span 60, Span 65, Span 80, and so on. Span 80 emulsifier is an amber-colored viscous oil, insoluble in water, easily soluble in ethanol, and easily hydrolyzed under the action of acid, alkali, and enzyme. It is a commonly used water-in-oil emulsifier.
Application
As a W/O type food emulsifier, Sorbitan Monooleate emulsifier can be used alone or mixed with Tween-60 and Tween-80. Span 80 can be used in the food industry including milk sugar, vegetable protein drinks, buttermilk, margarine, chocolate, hydrogenated vegetable oils, bread, pastries, etc.
Span 80 emulsifier is also employed as a co-solvent in petroleum products, as a rust inhibitor in rust preventive oils, and as a lubricant and softener for textiles and leather.
As it has a good emulsifying and stabilizing effect, Span 80 croda is often added to ice cream production. It helps to emulsify the raw material better, making the fat globules in a microfine emulsion. In addition, Span 80 emulsifier promotes fat-protein interactions and stabilizes them, giving ice cream a denser, smoother and more delicate texture.
