Gellan gum forms a gel network in water through several steps: Dispersion in Water: First, Gellan gum is added to a liquid, usually water, in powder or sheet form. It's stirred or agitated to ensure even dispersion. Heating: The mixture is heated at an appropriate temperature, typically within the range of 70°C to 90°C. Heating is a crucial step to activate the Gellan gum, causing it to dissolve and interact with water. Stirring and Activation: During heating, the mixture is continuously stirred to ensure complete dissolution of the Gellan gum. At this stage, Gellan gum interacts with water molecules, forming a precursor to gelation. Cooling: After the precursor is formed, the mixture is cooled to a lower temperature. As the temperature drops, Gellan gum molecules begin to rearrange, forming a three-dimensional network structure, which is the gel network. Gelation: Once the temperature decreases, Gellan gum starts to form a gel network within the liquid. This network can capture and hold particles present in the liquid, altering its flow and structure. Solidification: Once gelation takes place, the liquid transforms into a gel state. The duration of this process depends on the type and concentration of Gellan gum, as well as temperature conditions.
