Sodium benzoate is an organic substance, which is a kind of white particles or crystal powder, odorless or slightly rest aroma. It tastes slightly sweet and astringent. It is stable in the air and soluble in water. The pH value of its aqueous solution is 8 and soluble in ethanol. It is mainly used as food preservative, as well as pharmaceutical products and dyes.
