What Is It That Greatly Increases The Corrosion Risk Of Baked Products?

Product anti-corrosion is a systematic project in which the air in the workshop plays a very important role. If the air in the workshop is polluted, the risk of product anti-corrosion will be greatly increased. Below we will take you one by one through several aspects of the air in the workshop analysis.

Today, we mainly analyze the air in the workshop after the production, that is, after the product comes out of the oven.

First of all, there is the problem of negative pressure in the back workshop, that is, the pressure inside the back workshop is less than the pressure outside the back workshop. The reasons for the negative pressure in the workshop are as follows.

· Negative pressure fan in the oven room: When the product is baked, the oven needs to use a negative pressure fan to dissipate heat, a large amount of air in the workshop will be drawn outdoors, and the air in the outer room will also enter the inner room from the packaging opening due to the pressure difference If the sealing of the workshop is not good, the outdoor air will enter the inner compartment and cooling room from the gap.

· Negative pressure fan in the cooling room: In the cooling process of the product, because there is no hardware conditions or equipment such as a pre-cooling room, a negative pressure fan is installed on the wall of the cooling room, so that although the product achieves a rapid cooling effect, the outside is unclean The air was also sucked in, causing secondary pollution to the product.

· The design error of the fresh air system: the return air volume of the fresh air system in the inner compartment and the cooling room is greater than the inlet air volume or the strong exhaust volume of the pre-cooling room is greater than the fresh air inlet volume of the pre-cooling room, resulting in negative pressure. Although the static pressure difference is currently specified as 5-10Pa, However, due to the current production technology, environmental conditions and other factors, this static pressure difference is still low. It is recommended to set it based on the actual situation of the workshop.

The second is the influence of the air humidity in the workshop. If the humidity in the workshop is higher than 50%, the following problems will be caused.

  · If the sanitation is not thorough, the food residues in the gaps, corners and other places of the equipment are extremely easy to multiply under the condition of high humidity, which will cause secondary pollution to the product along with the air flow.

  · In the case of high humidity in the cooling room, condensed water will appear on the ceiling or conveyor belt. When the product comes into contact with this condensed water, local mildew and other problems will occur. (As shown on the right)

Finally, it is the secondary pollution from equipment such as external air circulation and internal air circulation. There are the following points.

   1. The primary filters such as the cloth bags outside the fresh air unit were not replaced or cleaned and disinfected in time.

  2. The primary, intermediate and high-efficiency filters in the fresh air blower are not replaced regularly. In addition to pollution, the air intake will also be reduced a lot, which may cause indoor negative pressure.

  3. The filters and air inlets and outlets of air conditioners and dehumidifiers are not regularly disinfected and cleaned, resulting in a large number of microorganisms in the air.

  4. The filtration system of the nitrogen generator has not been replaced for a long time, the nitrogen production pipeline has not been disinfected, or the nitrogen generator has incomplete drainage, resulting in water content and a large number of microorganisms in the nitrogen, which will pollute the air, equipment and products of the workshop.
