According to the source of emulsifier, it can be divided into synthetic and natural. The natural emulsifiers are lecithin, lanolin, Arabic gum, etc.

Emulsifiers are widely used in food, cosmetics, detergents, synthetic rubber, synthetic resin, pesticide, medicine, leather making, coating, textile, printing and dyeing, petrochemical industry and so on. In addition to emulsification, emulsifiers also have the functions of solubilization, permeation, wetting and descaling.

Emulsifier is one of the food additives commonly used in food processing. It is similar to surfactant. It can prevent the aggregation of dispersed phase droplets by wrapping them, and make them become stable colloidal dispersion existing in another immiscible or partially miscible liquid.
