In food bakery plants, especially in the cooling and packaging rooms, raw materials such as food stuffing and meat floss, or semi-finished products such as slices, finished products, and even inner packaging materials fall to the ground.
Because there are physical pollutants such as microorganisms and dust particles on the ground, and chemical pollutants that have disinfected the ground such as disinfectants. These pollution sources will have a certain impact on the hygiene and quality safety of the floor products, and will cause mildew and deterioration in severe cases.
How to deal with it? Treat them in different situations. In the raw material stage before cleaning or processing, the non-segmented disinfection process, if it does not affect the final product, the floor can be cleaned and used; the product after packaging, inflation or vacuum sealing, if the packaging is damaged after landing, it will be regarded as unqualified Product disposal; packaging materials need to be re-sterilized on the ground.
Four-step normative approach
1. Equipped with special containers for identification. The product production area is equipped with a marked plastic frame to store the raw materials that have fallen during the production process after cleaning; the product ripe area is equipped with fallen semi-finished products or products, and the semi-finished products are stored separately from the finished products; the packaging and sealing area is equipped with a special marking Frame, to place the packaging materials and accessories that fell on the ground during the production process.
2. After the production personnel pick up the fallen objects, they must re-wash their hands and disinfect them to avoid contamination.
3. Clean up discarded floor objects in time.
4. Strengthen the hygiene awareness education of production personnel, and handle the disinfection of personnel well to prevent the occurrence of cross contamination.
