Enzyme preparation refers to a biological product with catalytic function after enzyme purification and processing. It is mainly used to catalyze various chemical reactions in the production process. It has high catalytic efficiency, high specificity, mild operating conditions, lower energy consumption, and Chemical pollution and other characteristics, its application areas cover food (bread baking industry, flour deep processing, fruit processing industry, etc.), textiles, feed, lotion, papermaking, leather, medicine, energy development, environmental protection, etc. Enzyme preparations are derived from organisms and are generally safer and can be used in appropriate amounts according to production needs.

Enzyme preparations are extremely versatile, mainly used as pharmaceutical intermediates, additives for food processing, and growth promoters for livestock and poultry breeding. In addition, it is also used in textile, light industry, leather, papermaking, oil production, construction, environmental protection, military industry and other industries. The application types of enzyme preparations include amylase, protease, carbohydrase, catalase and cellulase, etc. The most used are amylase and protease, which account for 70% and 80% of the total consumption of enzyme preparations. Amylase is mainly used for dough improvement in bread production, pretreatment of cereal raw materials in infant food, saccharification and decomposition of starch in beer manufacturing, starch decomposition and improvement of filtration speed in juice processing, as well as for vegetable and syrup , Yitang, glucose, powdered dextrin and other food processing and manufacturing. Protease is mainly used in the production of hydrolyzed protein, meat softening, cold resistance of beer, baked products, cheese manufacturing, etc. In recent years, the field of development and application of enzyme preparations is still expanding.

In the early 1960s, the development of world enzyme preparations was relatively slow. In the 1970s, research and development have been extremely rapid, especially in its extraction methods, mechanism of action, growth and metabolism and other major theoretical research has continuously made new progress. So far, more than 3,000 kinds of enzymes have been reported, but only more than 60 kinds of enzymes have been produced on a large scale. According to reports, the world's enzyme preparation market is growing year by year at an average rate of 11%. The development prospects of the enzyme preparation industry are quite broad. After more than 50 years of rapid development, China's enzyme preparation industry has entered the ranks of the world's leading enzyme preparation countries. At present, there are about 30 enzyme preparations that have achieved large-scale production.

Now China's enzyme preparation products have been updated, mainly including the following 9 categories: glucoamylase, amylase, cellulase, protease, phytase, hemicellulase, pectinase, feed complex enzyme, beer complex enzyme, etc. . Among them, the output of glucoamylase, amylase, and phytase exceeded 10,000 tons; cellulase, hemicellulase and pectinase accounted for a small proportion, but they grew rapidly. The main application areas of Chinese enzyme preparations include: starch sugar industry, beer industry, fuel alcohol industry, wine and beverage industry, feed industry, textile industry, pharmaceutical industry, paper industry, fine chemical industry, detergent industry, leather industry, baking industry , Dairy industry, petroleum industry, etc. The enzyme preparation industry is gradually becoming an independent industry in China, promoting the development of the national economy.
