Crystalline Fructose
Crystalline fructose is one of the most common ketulose. It is also a monosaccharide. Pure fructose is a colorless crystal with a melting point of 103-105°C. It is not easy to crystallize. It is usually a viscous liquid and is easily soluble in water, ethanol and ether. It is naturally found in fruit, honey and grain juices. It has the advantages of good taste, high sweetness, low glycemic index and not easy to cause dental caries. The sweetness of fructose is 1.8 times that of sucrose, which is the sweetest sugar among all natural sugars.
