Disodium Phosphate
Disodium phosphate, white crystal, easily soluble in water,insoluble in ethanol, its aqueous solution is weakly alkaline, easy to weather in the air; anhydrous is white powder, easy to deliquesce; both are easily soluble in water, the aqueous solution is weak Alkaline, insoluble in alcohol.

APPLICATIONS:
Disodium phosphate is used as a bakery product in food to prevent oxidation and discoloration. It is an emulsifier for dairy products to prevent protein coagulation. Solid beverages have chelating and emulsifying buffering effects.
